Banana Baked Oatmeal

Ingredients

  • 2 tbsp. flaxseed or almond meal
  • 1/2 cup water
  • 1 medium mashed banana
  • 2 tbsp. maple syrup
  • 2 tbsp. melted coconut oil
  • 1/2 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 2 cups creamy almond milk
  • 2.5 cups wholegrain rolled oats
  • 3/4 cup mixed nuts of choice, such as pecans, walnuts, and cashews
  • 3 tbsp. peanut butter

Preparation

  1. Preheat oven to 180 degrees, grease baking dish with oil or line with baking paper.

  2. Add all ingredients excluding the oats and chopped nuts into a bowl and mix well, then fold through oats and nuts.

  3. Transfer to a cake tin or small baking dish and top with additional banana slices and nuts.

  4. Bake for 30-35 minutes until golden and edges are lightly caramelized.

Serving and storage

  1. Serve with additional toppings and a dash of warm coconut milk.

  2. Leftovers keep for 3-4 days.
