Banana Baked Oatmeal
Ingredients
- 2 tbsp. flaxseed or almond meal
- 1/2 cup water
- 1 medium mashed banana
- 2 tbsp. maple syrup
- 2 tbsp. melted coconut oil
- 1/2 tsp sea salt
- 1/2 tsp ground cinnamon
- 2 cups creamy almond milk
- 2.5 cups wholegrain rolled oats
- 3/4 cup mixed nuts of choice, such as pecans, walnuts, and cashews
- 3 tbsp. peanut butter
Preparation
Preheat oven to 180 degrees, grease baking dish with oil or line with baking paper.
Add all ingredients excluding the oats and chopped nuts into a bowl and mix well, then fold through oats and nuts.
Transfer to a cake tin or small baking dish and top with additional banana slices and nuts.
Bake for 30-35 minutes until golden and edges are lightly caramelized.
Serving and storage
Serve with additional toppings and a dash of warm coconut milk.
Leftovers keep for 3-4 days.
