Blueberry and Açaí Chia Jam Porridge

Ingredients

  • 3/4 oats
  • 1/4 quinoa flakes
  • 1 tablespoon milled flaxseed
  • 2 heaped tablespoons coconut yoghurt
  • a splash of vanilla extract
  • coconut milk (to cover)
  • 200g frozen blueberries
  • 1 packet frozen açaí
  • 2 tablespoons chia seeds
  • tahini
  • bananas
  • pomegranate seeds
  • a chunk of chocolate
  • sesame seeds
  • cacao nibs

Preparation

  1. Prepare the chia jam by placing 200g frozen blueberries, 1 packet frozen açaí, and 2 tablespoons chia seeds in a pan and gently heat, stirring occasionally.

  2. For the porridge, mix 3/4 oats, 1/4 quinoa flakes, 1 tablespoon milled flaxseed, 2 heaped tablespoons coconut yoghurt, and a splash of vanilla extract. Cover with coconut milk, stir, and either soak or cook depending on time.

  3. Spoon the porridge into a bowl.

  4. Spoon the hot berry jam over the porridge.

  5. Add toppings: tahini, sliced bananas, pomegranate seeds, a chunk of chocolate, sesame seeds, and cacao nibs.
