Hot Coconut Oat Porridge with Berries and Nuts

Ingredients

  • oats
  • 2 heaped tbsp coconut yoghurt
  • 1 or 2 heaped tbsp milled flaxseed
  • a handful of blueberries
  • coconut milk

Toppings

  • granola
  • blueberry chia jam
  • a chunk of dark chocolate
  • bananas
  • chopped pecans

Preparation

  1. Tip oats into a pan, add 2 heaped tbsp of coconut yoghurt, 1 or 2 heaped tbsp of milled flaxseed, a handful of blueberries, cover with coconut milk, and leave to soak overnight or for about 20 minutes in the morning.

  2. Add coconut milk while cooking the porridge.

  3. Cook until the oats are soft and the blueberries just burst.

  4. Spoon into a bowl and top with granola, blueberry chia jam, a chunk of dark chocolate, bananas, and chopped pecans.
