Fluffy Paleo Pumpkin Waffles Breakfast
Ingredients
- 1/3 cup pumpkin purée
- 2 eggs
- 1/4 cup cashew milk (add more if the batter is too thick)
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour
- 1 tsp pumpkin spice
- 1 tsp baking soda
Toppings
- Banana
- raspberry
- almond butter
- yogurt of choice
- chocolate gem
- maple syrup
Preparation
In a bowl, mix dry ingredients together: almond flour, tapioca flour, pumpkin spice, and baking soda
In another bowl, combine wet ingredients: pumpkin purée, eggs, cashew milk, and coconut oil
Gradually add wet mixture to dry mixture and stir until smooth; adjust batter thickness with additional cashew milk if needed
Preheat waffle iron to medium-high heat
Pour batter onto the waffle iron and cook until golden and crispy, about 3-5 minutes
Serve waffles hot with desired toppings
