Fluffy Paleo Pumpkin Waffles Breakfast

Ingredients

  • 1/3 cup pumpkin purée
  • 2 eggs
  • 1/4 cup cashew milk (add more if the batter is too thick)
  • 2 tbsp coconut oil
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 1 tsp pumpkin spice
  • 1 tsp baking soda

Toppings

  • raspberry
  • almond butter
  • yogurt of choice
  • chocolate gem
  • maple syrup

Preparation

  1. In a bowl, mix dry ingredients together: almond flour, tapioca flour, pumpkin spice, and baking soda

  2. In another bowl, combine wet ingredients: pumpkin purée, eggs, cashew milk, and coconut oil

  3. Gradually add wet mixture to dry mixture and stir until smooth; adjust batter thickness with additional cashew milk if needed

  4. Preheat waffle iron to medium-high heat

  5. Pour batter onto the waffle iron and cook until golden and crispy, about 3-5 minutes

  6. Serve waffles hot with desired toppings
