Paleo Pumpkin Waffles with Toppings
Ingredients
- 1/3 cup canned pumpkin purée
- 2 eggs
- 1/3 cup almond flour
- 1/3 cup tapioca flour
- a generous shake of pumpkin spice
- 1 tsp baking soda
- 2-3 tbsp milk (if batter is too dense)
Toppings
- Banana
- Chocolate gems
- Almond butter
- Maple syrup
Preparation
In a bowl, combine the pumpkin purée, eggs, almond flour, tapioca flour, pumpkin spice, and baking soda to form a batter.
If the batter is too dense, stir in 2-3 tablespoons of milk.
Heat a waffle iron according to manufacturer's instructions.
Pour batter into the waffle iron and cook until golden brown and crispy on the outside.
Prepare toppings by slicing banana and arranging other items as desired.
Serve waffles topped with sautéed apples seasoned with cinnamon sugar, banana, chocolate gems, almond butter, and maple syrup.
