Giant Caramelised Lebkuchen Spiced Pancake with Sauce
Ingredients
Pancakes
- 1/2 cup of oven baked or cooked pumpkin (if you don’t have pumpkins you can use more bananas instead)
- 2 very ripe small bananas
- 1/2 cup cashew milk (or other milk)
- 1/2 cup amaranth flour (or regular flour if you don’t want a gluten free option)
- 2 tsp of Lebkuchen spice
- 2 Tbs of maple syrup (or just 1 tsp if you use bananas instead of pumpkins)
- 1 tsp of vanilla extract
- Pinch of Himalayan salt
Sauce
- 1 Tbs of baobab powder
- 2 Tbs of Tahini
- 2 Tbs of peanut butter
- 1/3 tsp of Himalayan salt
- 2 tsp of Lebkuchen spice
- 3 Tbs of cashew milk
- 2 Tbs of date syrup
- 1 tsp of vanilla extract
Preparation
Whisk together all sauce ingredients until smooth and well combined.
Bake the pancake in a skillet with a bit of coconut oil first on the stove for 3-4 minutes, then in a preheated oven at 250 degrees C for 5 minutes, reduce heat to 200 degrees C and bake for a further 15 minutes.
