Peach and Cream Sweet Potato Pancakes
Ingredients
- 1/3 cup mashed sweet potato
- 2 eggs
- 1/4 cup almond butter
- 1/4 cup nut milk
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 2-3 tbsp tapioca flour (optional)
- 1 tsp baking soda
Toppings
- Peaches
- Blackberries
- Granola butter
- Yogurt
- Chia seeds
- Granola
Preparation
Steam or bake the sweet potato until soft, then peel and mash it.
Mix the mashed sweet potato, eggs, almond butter, nut milk, almond flour, tapioca flour, and baking soda together to form a batter.
Heat coconut oil in a pan and cook the batter to make pancakes.
Sauté the peaches until tender.
Assemble the pancakes with the sautéed peaches, blackberries, granola butter, yogurt, chia seeds, and granola.
