Wholegrain Acai Coconut Pancakes with Maca Latte

Ingredients

  • wholemeal flour
  • organic coconut flour
  • baking powder
  • acai powder
  • apple cider vinegar
  • plant milk

Maca chai latte

  • unsweetened soya milk
  • 1 tsp maca powder
  • 1/2 tsp cinnamon
  • ginger
  • black pepper

Preparation

  1. Mix dry ingredients for pancakes together in a bowl

  2. Add wet ingredients (apple cider vinegar and plant milk) to pancake mixture and stir until combined

  3. Cook pancake batter on a heated griddle or pan until golden brown on both sides

  4. Top cooked pancakes with unsweetened soya yoghurt

  5. For the latte, combine unsweetened soya milk, maca powder, cinnamon, ginger, and black pepper in a blender or pot

  6. Heat the mixture gently if desired, or serve cold
