Vegan Turmeric Pancakes with Yoghurt Topping

Ingredients

  • 1 cup soya milk
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 cup wholemeal flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of pink salt
  • 1 teaspoon turmeric or 1 tablespoon Nature's Heart Vitalising Superpowder
  • A little oil for frying

Preparation

  1. Mix 1 cup of soya milk with 1 tablespoon lemon juice or apple cider vinegar to make buttermilk. Let it sit for ten minutes and mix again.

  2. Add 1 cup wholemeal flour, 1 teaspoon baking powder, 1 teaspoon vanilla extract, a pinch of pink salt, and 1 teaspoon turmeric or 1 tablespoon Nature's Heart Vitalising Superpowder. Mix thoroughly.

  3. Fry the batter in a little oil until bubbles form on the surface, then flip and cook the other side.

Tips

  1. Top with yoghurt, flaked almonds, and date nectar for serving.

  2. Turmeric has anti-inflammatory properties and other healing abilities.

  3. Serve with a selection of fresh and dried fruits, and enjoy with coffee made with oat milk.
