Vegan Turmeric Pancakes with Yoghurt Topping
Ingredients
- 1 cup soya milk
- 1 tablespoon lemon juice or apple cider vinegar
- 1 cup wholemeal flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of pink salt
- 1 teaspoon turmeric or 1 tablespoon Nature's Heart Vitalising Superpowder
- A little oil for frying
Preparation
Mix 1 cup of soya milk with 1 tablespoon lemon juice or apple cider vinegar to make buttermilk. Let it sit for ten minutes and mix again.
Add 1 cup wholemeal flour, 1 teaspoon baking powder, 1 teaspoon vanilla extract, a pinch of pink salt, and 1 teaspoon turmeric or 1 tablespoon Nature's Heart Vitalising Superpowder. Mix thoroughly.
Fry the batter in a little oil until bubbles form on the surface, then flip and cook the other side.
Tips
Top with yoghurt, flaked almonds, and date nectar for serving.
Turmeric has anti-inflammatory properties and other healing abilities.
Serve with a selection of fresh and dried fruits, and enjoy with coffee made with oat milk.
