Dark Chocolate Pb&j Cups
Ingredients
- for the chocolate coating:
- 1 cup dark chocolate
- 1 tbs coconut oil
- for the raspberry chia jam filling:
- 1 cup raspberries
- 1/2 cup water
- 2 tbs chia seeds
- 1 tbs maple syrup
Preparation
Add the raspberries into a pot of simmering water over medium heat. Cook until the berries can be easily mashed and add in chia seeds. Cook for another minute. Remove from heat and stir in maple syrup
Assembling the PB&J cups
Remove the chocolate cups from the fridge and add a layer of peanut butter. Spoon in a tablespoon of the raspberry chia jam filling and let it cool in the fridge for 10 minutes. Add on another layer (or two) of your melted chocolate and chill once more in the fridge
