Peanut Butter and Jelly Fried Banana Toast
Ingredients
Raspberry chia jam
- 1 cup (120g) raspberries, fresh or frozen
- 1 tsp chia seeds
- 1-2 tbsp maple syrup (to taste)
- pinch sea salt
Toast and banana components
- 2 slices toast
- 1 banana
- 1 tsp coconut oil
Preparation
In a saucepan add raspberries and bring to medium high heat. Cook for 5 minutes, or until softened. Muddle gently with wooden spoon. Add chia seeds, maple syrup and pinch sea salt. Let jam simmer lightly for 2-3 more minutes and remove from heat. Wait at least 10 minutes to thicken and cool.
Generously lather two slices of toast with peanut butter and top with raspberry chia jam. Cut banana into slices and fry in a skillet with 1 tsp coconut oil for 1-2 mins each side. Top toast with caramelized banana. Or, cut banana into heart shapes and top on toast.
