Vegan Brownies with Sweet Potato Base

Ingredients

Base

  • 4 roasted sweet potatoes
  • 1.5 cups oats
  • 10 medjool dates
  • 1.5 cups ground almonds
  • 1 cup cocoa powder
  • 1/2 cup maple syrup
  • 5 tbsp coconut oil

Topping

  • 5 tbsp coconut oil
  • 1/3 cup maple syrup
  • 1/3 cup nut butter
  • 1/2 cup cocoa powder
  • 2 large squares dark chocolate

Preparation

  1. Blend together the base ingredients.

  2. Bake for 45 minutes at 180°C (352°F).

  3. Melt together the topping ingredients.

  4. Put the topping on the base.

  5. Refrigerate for 2 hours.
