Easy Dairy Free Blueberry Baked Oats

Ingredients

  • 2 cups oats
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 2 tsp vanilla
  • 1 3/4 cup oat milk
  • 1/3 cup honey
  • 2 tbsp olive oil
  • 2 cups blueberries (fresh or frozen)
  • extra olive oil for greasing

Preparation

  1. Preheat the oven to 180C

  2. In a large bowl mix the oats, cinnamon, baking powder and salt

  3. In another bowl whisk together the eggs, vanilla, oat milk, honey and olive oil

  4. Pour the liquid over the oat mix and stir together

  5. Brush a little olive oil on the base of the dish and add in the blueberries, keeping back a few to pop on top

  6. Pour the mix over the blueberries, give it a little shake and add on top the remaining blueberries

  7. Bake for 40-45 minutes till the top is golden brown

  8. Let it cool a little, serve and enjoy!

Serving tips

  1. Serve warm with extra fruit such as bananas and fresh blueberries, and yoghurt for the kids
