Easy Plant-Based Chocolate Donuts with Icing

Ingredients

  • 1 cup birchbenders plant-based pancake mix
  • 1 cup unsweetened almond milk
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • nonstick spray or coconut oil for pan

Icing

  • 1/2 cup happydaybrands vegan chocolate chips
  • 1/2 tbsp coconut oil
  • pink Himalayan salt for sprinkling

Preparation

  1. Preheat oven to 350F.

  2. In a bowl, combine 1 cup birchbenders plant-based pancake mix, 1 cup unsweetened almond milk, 1 tsp cinnamon, and 1/2 tsp baking powder.

  3. Spray a mini donut pan with nonstick spray or rub it with coconut oil.

  4. Add the batter to the pan, filling it almost all the way up because the donuts don’t rise much.

  5. Bake for 15-17 minutes.

  6. Let the donuts cool before adding the chocolate topping.

  7. Melt 1/2 cup happydaybrands vegan chocolate chips with 1/2 tbsp coconut oil by heating for 15 seconds, stirring, and continuing until fully melted.

  8. Top the donuts with the melted icing and sprinkle pink Himalayan salt on top.

  9. Eat immediately or refrigerate to harden the chocolate.

Tips

  1. Fill the donut pan almost full as the batter doesn’t rise significantly.

  2. These donuts are best enjoyed as a quick, healthy breakfast or snack.
