Vegan Almond Flour Cookies

Ingredients

  • 1/2 cup simple mills muffin and bread almond flour mix
  • 1 flax egg (1 tablespoon ground flax seeds mixed with 3 tablespoons water)
  • 4 tablespoons creamy almond butter
  • 2 tablespoons almond milk
  • 1/4 teaspoon baking powder
  • Vegan chocolate chips
  • Hukitchen chocolate

Preparation

  1. Prep the flax egg first because that takes the longest to set

  2. Once the vegan egg has thickened, stir in the almond butter and almond milk

  3. Mix in the flour and baking powder to create your dough

  4. Roll into 7 flattened balls on parchment paper and add enjoylifefoods vegan chocolate chips or a hukitchen almond butter plus puffed quinoa dark chocolate square to the top

  5. Bake at 350 degrees Fahrenheit for 8 minutes
