Vegan Gingerbread Waffle House
Ingredients
- 100g spelt flour
- 1 scoop vanilla protein powder
- 1 tablespoon coconut sugar
- 1/2 courgette
- 10g chia seeds
- 200ml almond milk
- Squeeze of lemon
- 1/2 teaspoon baking powder
- A bit of cinnamon
- A bit of ginger
- A bit of nutmeg
- A bit of mixed spice
- A bit of vanilla extract
Preparation
Grate the courgette
In a bowl, mix together the dry ingredients: spelt flour, vanilla protein powder, coconut sugar, chia seeds, baking powder, cinnamon, ginger, nutmeg, and mixed spice
In another bowl, combine the wet ingredients: grated courgette, almond milk, squeeze of lemon, and vanilla extract
Combine the wet and dry mixtures to form a batter
Preheat the waffle iron and cook the batter until golden and crisp
