Vegan Gingerbread Waffle House

Ingredients

  • 100g spelt flour
  • 1 scoop vanilla protein powder
  • 1 tablespoon coconut sugar
  • 1/2 courgette
  • 10g chia seeds
  • 200ml almond milk
  • Squeeze of lemon
  • 1/2 teaspoon baking powder
  • A bit of cinnamon
  • A bit of ginger
  • A bit of nutmeg
  • A bit of mixed spice
  • A bit of vanilla extract

Preparation

  1. Grate the courgette

  2. In a bowl, mix together the dry ingredients: spelt flour, vanilla protein powder, coconut sugar, chia seeds, baking powder, cinnamon, ginger, nutmeg, and mixed spice

  3. In another bowl, combine the wet ingredients: grated courgette, almond milk, squeeze of lemon, and vanilla extract

  4. Combine the wet and dry mixtures to form a batter

  5. Preheat the waffle iron and cook the batter until golden and crisp
