Date and Vanilla Zoats

Ingredients

  • Gluten-free oats (soaked)
  • Dates
  • 1/4 zucchini
  • 1 spoon vanilla protein powder
  • Splash of oat milk
  • 1 spoon egg white

Toppings

  • Frozen raspberries and cherries
  • Dried mulberries
  • Almond maca butter
  • Bee pollen

Preparation

  1. Grate the zucchini finely and squeeze out excess liquid to remove moisture.

  2. In a bowl, combine the soaked gluten-free oats, dates, grated zucchini, vanilla protein powder, oat milk, and egg white. Mix well.

  3. Top with frozen raspberries and cherries, dried mulberries, almond maca butter, and bee pollen.

  4. Serve immediately or as desired.
