Tropical Coconut Oats Energy Bowl

Ingredients

  • 1/2 cup oats
  • 1 cup velvet coconut milk
  • 1 tbsp coconut honey
  • 2 tbsp desiccated coconut
  • a pinch of salt

Toppings

  • 1 banana
  • 1 tsp coconut oil
  • 1 tsp coconut honey
  • grapes
  • pomegranate
  • strawberry yogurt
  • tiger-nut butter

Preparation

  1. Mix the oats, velvet coconut milk, coconut honey, desiccated coconut, and salt together and let it sit overnight.

  2. Slice the banana, cook it in 1 tsp coconut oil, and drizzle with 1 tsp coconut honey to caramelize.

  3. Serve the overnight mixture topped with caramelized banana, grapes, pomegranate, strawberry yogurt, and tiger-nut butter.
