Tropical Coconut Oats Energy Bowl
Ingredients
- 1/2 cup oats
- 1 cup velvet coconut milk
- 1 tbsp coconut honey
- 2 tbsp desiccated coconut
- a pinch of salt
Toppings
- 1 banana
- 1 tsp coconut oil
- 1 tsp coconut honey
- grapes
- pomegranate
- strawberry yogurt
- tiger-nut butter
Preparation
Mix the oats, velvet coconut milk, coconut honey, desiccated coconut, and salt together and let it sit overnight.
Slice the banana, cook it in 1 tsp coconut oil, and drizzle with 1 tsp coconut honey to caramelize.
Serve the overnight mixture topped with caramelized banana, grapes, pomegranate, strawberry yogurt, and tiger-nut butter.
