Vegan Avocado Mango and Teriyaki Tofu Sushi Rolls

Ingredients

Avocado mango rolls

  • 1 cup black rice
  • 1 sheet dried nori
  • Avocado
  • Cucumber
  • Mango (or papaya, pineapple, or strawberries)

Teriyaki tofu rolls

  • 1 cup white rice
  • 1 sheet dried nori
  • Teriyaki tofu (firm tofu marinated in a mix of soy sauce, maple syrup and ginger)
  • Carrots
  • Red bell pepper

Preparation

  1. Cook the rice according to package instructions and let it cool slightly.

  2. For Teriyaki Tofu rolls, marinate firm tofu in a mixture of soy sauce, maple syrup, and ginger, then cook until golden and set aside.

  3. Prepare the fillings by slicing avocado, cucumber, mango, carrots, and red bell pepper into thin strips.

  4. Lay a sheet of nori on a bamboo mat, spread a thin layer of rice over it, add the desired fillings in the center, and roll tightly using the mat.

  5. Use a sharp knife to cut the rolls into bite-sized pieces.

  6. Serve immediately with optional soy sauce or other dips.

Tips

  1. Use a bamboo rolling mat for easier assembly if available.

  2. Adjust fillings based on preference or dietary needs, such as the FODMAP substitutions provided.
