Fiber Rich Salad with Figs and Avocado

Ingredients

  • 3-4 fresh figs or dried figs
  • 1/2 avocado
  • 1 cup arugula
  • 2 cups romaine
  • 1/2 cup walnuts
  • 2 lemons
  • Pinch of fresh ground pepper
  • Optional: Pinch of Himalayan salt

Preparation

  1. Note: Ensure dried figs have no added sugars or sulfates, and figs are a good source of potassium and better for eyesight than carrots.

  2. Chop the arugula and romaine lettuce.

  3. Dice the figs and avocado.

  4. Chop the walnuts if needed.

  5. In a bowl, combine all the chopped vegetables and fruits.

  6. Juice the two lemons and pour over the mixture.

  7. Add a pinch of fresh ground pepper and optional Himalayan salt.

  8. Mix well and enjoy.
