Radish Egg Salad Toast
Ingredients
- 4 eggs
- 1 tbsp mayo
- 1 tsp Dijon
- 1/4 cup diced radishes
- 1/4 cup diced green onion
- 1/2 tsp salt, pepper, chili flakes
- Toast
Toppings
- Avocado
- Arugula
Preparation
Bring a small saucepan of water to a boil.
Add eggs and set timer for 9 minutes.
Remove eggs and place into an ice bath for 4 minutes.
Peel and place into a bowl; mash with a fork.
Add the remaining ingredients and mix until combined.
Toast your bread, top with avocado and arugula, and add the egg salad.
Tips
Spring always makes me think of radishes, which are perfect combined with eggs and add a great crunch.
