Avocado and Hard-Boiled Egg Toast
Ingredients
- 2 pieces gluten-free bread
- 1 avocado
- 10-12 eggs
- EBTB seasoning (such as Trader Joe's Everything But The Bagel)
Preparation
Fill a small or medium pot halfway with water and add 10-12 eggs.
Bring the water to a boil over high heat.
Remove the pot from heat and cover with a lid.
Let the eggs sit for 20-25 minutes.
Transfer the eggs to a bowl of ice water to cool.
Toast two pieces of gluten-free bread.
Mash the avocado.
Spread the mashed avocado on the toasted bread.
Slice the hard-boiled eggs and add them on top.
Sprinkle with EBTB seasoning and serve.
