Avocado and Hard-Boiled Egg Toast

Ingredients

  • 2 pieces gluten-free bread
  • 1 avocado
  • 10-12 eggs
  • EBTB seasoning (such as Trader Joe's Everything But The Bagel)

Preparation

  1. Fill a small or medium pot halfway with water and add 10-12 eggs.

  2. Bring the water to a boil over high heat.

  3. Remove the pot from heat and cover with a lid.

  4. Let the eggs sit for 20-25 minutes.

  5. Transfer the eggs to a bowl of ice water to cool.

  6. Toast two pieces of gluten-free bread.

  7. Mash the avocado.

  8. Spread the mashed avocado on the toasted bread.

  9. Slice the hard-boiled eggs and add them on top.

  10. Sprinkle with EBTB seasoning and serve.
