Radish Egg Salad Toast

Ingredients

  • 4 eggs
  • 1 tbsp mayo
  • 1 tsp Dijon
  • 1/4 cup diced radishes
  • 1/4 cup diced green onion
  • 1/2 tsp salt, pepper, chili flakes
  • Toast
  • Avocado
  • Arugula

Preparation

  1. Bring a small saucepan of water to a boil.

  2. Add eggs and set timer for 9 minutes.

  3. Remove eggs and place into an ice bath for 4 minutes.

  4. Peel and place into a bowl; mash with a fork.

  5. Add the remainder of ingredients and mix until combined.

  6. Toast your bread, top with avocado and arugula, and add the egg salad.
