Refreshing Mango Salad with Umami Sauce

Ingredients

Salad

  • 1 large ripe mango, chopped into chunky pieces or 2 medium
  • 1/4 red onion, chopped small
  • 1/4 cup chopped coriander
  • 1/4 large red pepper, chopped or a few bottled peppadew
  • Red chilli, chopped

Sauce

  • 1/4 teaspoon crushed garlic
  • 1/8 cup brown vinegar
  • 1/8 cup brown sugar or maple syrup
  • Soy sauce, a good splash
  • Salt

Garnish

  • Black and white sesame seeds
  • Chilli flakes

Preparation

  1. Toss together all the salad ingredients.

  2. Simmer the sauce until sticky but still thin and pourable.

  3. Pour over the salad.

  4. Toss together.

  5. Ideally chill overnight to marinate.

  6. Add to a flat serving dish and garnish with chopped coriander and black and white sesame seeds.

  7. Sprinkle chilli flakes.

  8. Serve chilled.

Notes

  1. Allowing it to stand overnight enhances the flavour.

  2. Depending on your brand of soy sauce, you may add more.

  3. Quantities of vegetables may vary depending on the size of the produce.
