Turkish Meatballs and Bean Salad

Ingredients

For the meatballs

  • 1 kg ground beef
  • 3 slices of bread
  • 1 pinch of parsley
  • 1 onion
  • 2 cloves of garlic
  • 6 g ground pepper
  • 5 g thyme
  • 6 g of chili pepper
  • 3 g of black pepper
  • 3 g carbonate
  • 1 egg
  • 100 ml of water

For the piyaz

  • 400 g boiled dry beans
  • 1/2 bunch parsley
  • 1 piece of red onion
  • 1 piece white onion
  • 7 g sumac
  • 1 piece of lemon
  • 50 ml olive oil
  • 5 g of chilli powder
  • 3 eggs (for the top)

Preparation

Meatball cooking

  1. Mix and knead all the meatball ingredients together.

  2. Heat a cast-iron pan until it smokes.

  3. Grease the meatballs and cook them in the pan.

  4. Do not flip the meatballs immediately to avoid sticking.

Piyaz assembly

  1. Cut all the piyaz ingredients.

  2. Mix them together.

  3. Optionally rub the onions with salt to reduce sharpness.

Tips

  1. Be prepared for smoke when heating the pan for meatballs, as there is no easy solution.
