Classic Saucy Potato Salad
Ingredients
- 4 boiled potatoes
- 1 onion
- 1 red bell pepper
- 1 carrot
- 6-7 gherkins
- 1 small bowl corn
- 1/2 bunch parsley
- 1/2 bunch dill
- 3-4 tablespoons olive oil
Sauce
- 2 cups yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon mustard sauce, optional
- Juice of 1/2 lemon
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 2 grated garlic cloves, optional
- 3 tablespoons olive oil
Preparation
Wash the potatoes and boil them. Let them cool.
In a pan, sauté the thinly sliced onion, red pepper, and carrot with olive oil, then let them cool.
Prepare the sauce by mixing yogurt, mayonnaise, mustard, lemon juice, spices, and whisk everything together.
Cut the potatoes into cubes and finely chop the parsley and dill.
Add the cooled sautéed vegetables to the yogurt sauce.
Add the corn and gherkins, and mix everything.
Optionally, drizzle with a tablespoon of olive oil. It is ready to serve.
