Chipotle Burgers with Sweet Potato Buns

Ingredients

  • 1 lb grass fed ground beef
  • 1 tsp chipotle powder
  • 1 tsp onion powder
  • 1/2 tsp chili powder
  • olive oil
  • extra large sweet potato
  • kale
  • onion

Preparation

  1. Mix 1 tsp chipotle powder, 1 tsp onion powder, and 1/2 tsp chili powder together.

  2. Combine the spice mixture with 1 lb grass fed ground beef and form into 4 patties.

  3. Heat a skillet over medium heat and add olive oil when hot.

  4. Cook the burger patties for 5-6 minutes on each side.

  5. Slice an extra large sweet potato into rounds; optionally soften by boiling or microwaving if too tough.

  6. Preheat oven to 500°F or use broil setting.

  7. Bake the sweet potato slices on the bottom shelf for 10-12 minutes; move to top shelf at the end for crispiness if desired.

  8. Sauté onion and serve the burgers with kale and the sweet potato buns.
