Baked Tofu Bolognese with Spicy Marinade

Ingredients

  • 1-14oz pack extra firm tofu
  • 1.5 tbsp gluten-free tamari or soy sauce
  • 3 tbsp nutritional yeast
  • 1.5 tsp chili powder
  • 1.5 tsp smoked paprika
  • 1.5 tsp chipotle powder
  • 0.75 tsp garlic powder
  • 1.5 tbsp olive oil
  • Tomato sauce (amount to taste, e.g., 3 cups)
  • Pasta for serving

Preparation

  1. Pat dry the tofu and crumble it with hands to resemble ground meat. Set aside.

  2. Mix together the marinade: 1.5 tbsp gluten-free tamari or soy sauce, 3 tbsp nutritional yeast, 1.5 tsp chili powder, 1.5 tsp smoked paprika, 1.5 tsp chipotle powder, 0.75 tsp garlic powder, and 1.5 tbsp olive oil.

  3. Rub the marinade evenly over the tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375F. Toss after about 15 minutes and continue cooking until browned but not burnt.

  5. Mix with desired amount of tomato sauce and simmer for about 15 minutes until slightly thickened. (I used about 3 cups of tomato sauce.)

  6. Serve with pasta.
