Vegan Tofu Bolognese with Marinade Spices
Ingredients
- 1-14oz pack extra firm tofu
- 1.5 tbsp gluten-free tamari or soy sauce
- 3 tbsp nutritional yeast
- 1.5 tsp chili powder
- 1.5 tsp smoked paprika
- 1.5 tsp chipotle powder
- 0.75 tsp garlic powder
- 1.5 tbsp olive oil (optional)
- 4 cups tomato sauce (homemade or store-bought)
Preparation
Pat dry 1-14oz pack of extra firm tofu and crumble into pieces resembling ground meat.
Mix together the marinade using the specified ingredients.
Rub the marinade evenly over the tofu crumbles.
Bake on a parchment-lined baking sheet at 375F, tossing after 15 minutes and continuing until browned but not burnt.
Mix the baked tofu with tomato sauce and simmer for about 15 minutes until slightly thickened, using desired amount of sauce.
Cook pasta in the same pot by adding it after the sauce has simmered a few minutes and covering to simmer until done, or cook pasta separately and add when serving.
