Protein French Toast Bites
Ingredients
- 3-4 slices sourdough bread
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1 tsp cinnamon
- 2 scoops vanilla protein powder
- 1 tsp coconut sugar
- coconut oil or ghee
- 2 tsp cinnamon (optional for coating)
- 2 tsp coconut sugar (optional for coating)
- plain yogurt (for dipping)
- organic maple syrup (for dipping)
Preparation
Cut 3-4 slices of sourdough bread into cubes.
Mix 2 eggs, 1/2 cup unsweetened almond milk, 1 tsp cinnamon, 2 scoops vanilla protein powder, and 1 tsp coconut sugar together using an immersion blender.
Soak the bread cubes in the mixture.
Heat a skillet over low medium heat and add coconut oil or ghee.
Add the soaked cubes to the skillet and cook for 5-6 minutes, moving them around to prevent sticking.
Optionally, coat the cooked bites in a mixture of 2 tsp cinnamon and 2 tsp coconut sugar.
Serve with plain yogurt and organic maple syrup for dipping. Best for breakfast or brunch, and consider using fermented bread for easier digestion.
