Tuna Melt Garlic Bread Toasties
Ingredients
- 8 slices of frozen garlic bread
- A small handful of finely chopped red pepper
- A small handful of finely chopped celery
- A very small handful of finely chopped red onion
- 2 x tins of tuna (drained)
- 100g mayonnaise
- 100g grated cheddar cheese
Preparation
Turn the grill to medium.
Line a baking tray with greaseproof paper.
Place 4 slices of frozen garlic bread on the tray, butter side up and grill for a few minutes until crisp and golden, then turn them over and set aside.
Place the red pepper, celery and red onion into a bowl, add the tuna and mayonnaise, season with salt and pepper and stir well.
Divide the tuna mixture between the cooked garlic bread slices, spreading it evenly to the edges; you may not need all the tuna.
Top with grated cheese, leaving a little to sprinkle on top of the toasties.
Place 4 more slices of garlic bread on top, butter side up and finish with a scatter of the remaining grated cheese.
Place under the grill and cook until the top slices are golden brown, crisp and the cheese has melted.
Notes
This recipe makes 4 servings.
Serve as a light lunch or with chips for a more substantial dinner.
It combines the crunch of chopped vegetables with the gooeyness of a melt.
