Garlic-Infused Chicken Oil by Susan
Ingredients
- 100 ml neutral oil
- 250 grams chicken fat and skin
- 7 cloves garlic, finely chopped
- 1 tablespoon sesame oil
Preparation
Heat the oil and chicken skin in a pan on the lowest heat
When the chicken skin starts to turn yellowish, add the garlic and cook until fragrant and the skin is dry
If the garlic begins to yellow, immediately turn off the heat, as the hot oil will continue cooking it to brown, then add the sesame oil and stir well
The chicken oil is ready to use
Notes
If storing, place in a glass airtight container and it can be used anytime for stir-fries, cap cay, meatball soup, and more
