Homemade Carrot Ginger Dressing
Ingredients
- 1/4 cup rice vinegar
- 1/4 cup water
- 3 tbsp avocado or grape seed oil
- 1/2 tbsp toasted sesame oil
- 1 large carrot, chopped
- 1 large thumb-sized piece of ginger, peeled
- 1 tbsp red onion
- 1 tbsp miso paste
- 3-4 drops of monk fruit extract or 1 tbsp sugar of choice
- Pinch of salt and pepper
Preparation
Blend all ingredients until smooth in a high-speed blender.
Store refrigerated in an airtight container for up to 4 days.
