Piña Colada Nice Cream with Chia Pudding

Ingredients

  • 1/4 cup almond milk
  • 2 tbsp coconut milk
  • 2 tbsp chia seeds
  • 1/2 cup frozen pineapple
  • 1/4 cup almond milk
  • 1 tsp maple syrup
  • 1 tbsp coconut milk

Preparation

  1. Soak below in a cup until chia seeds are soft: 1/4 cup almond milk, 2 tbsp coconut milk, 2 tbsp chia seeds; if this pudding is too thick, add few more tbsp of coconut milk

  2. Pineapple nice cream: 1/2 cup frozen pineapple, 1/4 cup almond milk, 1 tsp maple syrup, 1 tbsp coconut milk. Blend above until well combined, adjust accordingly to your preferred texture, ie. more frozen pineapple to make it thick or more almond milk for a softer custardy feel

  3. Garnished with toasted coconut and pomegranate seeds
