Indonesian Tofu Tongseng Sweet Soy Stew
Ingredients
- 600 g tofu
- 2 cloves garlic
- cooking oil
- 2 stalks lemongrass
- 2 Indonesian bay leaves
- 1.5 L water
- 150 ml sweet soy sauce
- 5 cabbage leaves
- 1 red tomato
- 5 red bird's eye chilies
- 1 stalk green onions
- 2 tablespoons fried shallots
Spice paste
- 10 shallots
- 4 cloves garlic
- 4 large red chilies
- 3 candlenuts
- 1 tablespoon chicken bouillon powder
- 1 teaspoon salt
- 1 teaspoon white pepper powder
- 1 tablespoon curry powder
- 200 ml thin coconut milk
- 5 tablespoons cooking oil
Preparation
Heat oil in a wok, then fry tofu and garlic until lightly browned; set aside
Saute the spice paste, lemongrass, and Indonesian bay leaves until cooked and fragrant
Pour in water, add tofu and sweet soy sauce, and bring to a boil
Add cabbage, tomato, bird's eye chilies, and green onions; cook while stirring, then remove from heat
Serve with fried shallots sprinkled on top
