Indonesian Vegetable-Stuffed Rice Cake
Ingredients
Rice cake base
- 500 grams rice
- 6 bay leaves
- 1 teaspoon heaping salt
- 900 ml water
Filling vegetables
- 2 medium potatoes
- 2 carrots
- 2 green onions
Spice blend
- 5 shallots
- 3 garlic cloves
- 1/4 teaspoon ground pepper
- 1 teaspoon powdered stock
- 1/4 teaspoon salt
- 1/2 teaspoon white sugar
- 1 cup water
- Banana leaves
Preparation
Put all rice cake ingredients into a pot, cook over medium heat, stir until it becomes a thick mixture, leave a little water and do not make it too dry, then remove from heat and set aside
Heat a little cooking oil for sautéing, sauté the ground spices until cooked, add potatoes and carrots, stir until well mixed, add water, pepper, stock, salt, and sugar, stir well, and cook until the water evaporates
Prepare banana leaves, put 2 tablespoons of rice mixture, flatten with a spoon, fill with the vegetable filling about 1.5 teaspoons, roll up and seal the sides, repeat until finished, yielding 18 pieces of lontong
Heat a steamer pot, add the lontong, and steam for 45 to 60 minutes
