Raspberry Chocolate Cottage Cheese Ice Cream Bites
Ingredients
- 1 tub (16 oz) full fat cottage cheese
- 1/3 cup maple syrup or honey or agave, to taste
- 1/3 cup frozen raspberries
- 1/3 cup chocolate of your choice
Preparation
Roughly strain the cottage cheese in a cheese cloth.
Blend with maple syrup and raspberries until creamy.
If preferred, pulse more raspberries for small pieces.
Pour the mixture into a silicone ice tray.
Melt the chocolate.
Top with the melted chocolate and spread immediately as it hardens quickly.
Freeze for at least 3 hours.
Pop out of the tray and enjoy.
Tips
Strain the cottage cheese with a cheese cloth for a creamier texture.
