Raspberry Chocolate Cottage Cheese Ice Cream Bites

Ingredients

  • 1 tub (16 oz) full fat cottage cheese
  • 1/3 cup maple syrup or honey or agave, to taste
  • 1/3 cup frozen raspberries
  • 1/3 cup chocolate of your choice

Preparation

  1. Roughly strain the cottage cheese in a cheese cloth.

  2. Blend with maple syrup and raspberries until creamy.

  3. If preferred, pulse more raspberries for small pieces.

  4. Pour the mixture into a silicone ice tray.

  5. Melt the chocolate.

  6. Top with the melted chocolate and spread immediately as it hardens quickly.

  7. Freeze for at least 3 hours.

  8. Pop out of the tray and enjoy.

Tips

  1. Strain the cottage cheese with a cheese cloth for a creamier texture.
