Almond Joy Inspired Mug Cake
Ingredients
- 1/2 cup rolled oats
- 1/2 tbsp coconut sugar
- 1/4 tsp baking soda
- pinch of salt
- 1/3 cup almond milk
- 1.5 tbsp almond butter
- 1 tbsp coconut oil, melted
- 1/8 tsp almond extract
- 1 tbsp shredded coconut
- crushed Hu Kitchen chocolate (use a square to top with too!)
Preparation
In a microwave-safe mug, combine the dry ingredients: rolled oats, coconut sugar, baking soda, and salt.
Add the wet ingredients: almond milk, almond butter, melted coconut oil, and almond extract. Mix well until combined.
Stir in the shredded coconut.
Top with crushed Hu Kitchen chocolate.
Microwave on high for 1-2 minutes or until the cake is set and cooked through.
