Almond Joy Inspired Mug Cake

Ingredients

  • 1/2 cup rolled oats
  • 1/2 tbsp coconut sugar
  • 1/4 tsp baking soda
  • pinch of salt
  • 1/3 cup almond milk
  • 1.5 tbsp almond butter
  • 1 tbsp coconut oil, melted
  • 1/8 tsp almond extract
  • 1 tbsp shredded coconut
  • crushed Hu Kitchen chocolate (use a square to top with too!)

Preparation

  1. In a microwave-safe mug, combine the dry ingredients: rolled oats, coconut sugar, baking soda, and salt.

  2. Add the wet ingredients: almond milk, almond butter, melted coconut oil, and almond extract. Mix well until combined.

  3. Stir in the shredded coconut.

  4. Top with crushed Hu Kitchen chocolate.

  5. Microwave on high for 1-2 minutes or until the cake is set and cooked through.
