Creamy Asian-Style Chickpeas and Broccoli

Ingredients

  • 1/3 cup almond or peanut butter
  • 1 tbsp coconut aminos or low-sodium tamari or soy sauce
  • 2 tbsp fresh lime juice
  • 2 tsp toasted sesame oil
  • 3/4 tsp sambal oelek or sriracha
  • 1/2 tsp mirin
  • 1/2 tsp maple syrup
  • 1 minced garlic clove
  • 2 tsp grated ginger
  • 2 tbsp water (adjust as needed)
  • 1-15 oz can washed garbanzos (chickpeas)
  • 1 cup lightly steamed or roasted broccoli florets

Preparation

  1. Mix all the sauce ingredients together: almond or peanut butter, coconut aminos or soy sauce, lime juice, sesame oil, sambal oelek or sriracha, mirin, maple syrup, minced garlic, and grated ginger.

  2. Add 2 tbsp water and mix well. Add more water as needed to achieve the desired consistency.

  3. Stir in the washed garbanzo beans and the lightly steamed or roasted broccoli florets.
