Creamy Asian-Style Chickpeas and Broccoli
Ingredients
- 1/3 cup almond or peanut butter
- 1 tbsp coconut aminos or low-sodium tamari or soy sauce
- 2 tbsp fresh lime juice
- 2 tsp toasted sesame oil
- 3/4 tsp sambal oelek or sriracha
- 1/2 tsp mirin
- 1/2 tsp maple syrup
- 1 minced garlic clove
- 2 tsp grated ginger
- 2 tbsp water (adjust as needed)
- 1-15 oz can washed garbanzos (chickpeas)
- 1 cup lightly steamed or roasted broccoli florets
Preparation
Mix all the sauce ingredients together: almond or peanut butter, coconut aminos or soy sauce, lime juice, sesame oil, sambal oelek or sriracha, mirin, maple syrup, minced garlic, and grated ginger.
Add 2 tbsp water and mix well. Add more water as needed to achieve the desired consistency.
Stir in the washed garbanzo beans and the lightly steamed or roasted broccoli florets.
