Delicious Chocolate Pumpkin Energy Balls

Ingredients

  • 1 cup oat flour (you can also use almond flour)
  • 1/4 cup pumpkin purée
  • 1/2 cup chickpeas, rinsed and drained
  • 1/2 to 1 teaspoon pumpkin pie spice
  • Dash of Himalayan pink salt
  • 1/4 cup agave
  • Melted dark chocolate (e.g., JoJo's Chocolate Bark)
  • Shredded unsweetened coconut
  • Crumbled Emmy's Organics pumpkin spice coconut cookies

Preparation

  1. Blend all ingredients together in a food processor.

  2. Roll the dough into balls.

  3. Coat the balls in melted dark chocolate, shredded unsweetened coconut, and crumbled pumpkin spice coconut cookies.

  4. Store the coated balls in the fridge.
