Delicious Chocolate Pumpkin Energy Balls
Ingredients
- 1 cup oat flour (you can also use almond flour)
- 1/4 cup pumpkin purée
- 1/2 cup chickpeas, rinsed and drained
- 1/2 to 1 teaspoon pumpkin pie spice
- Dash of Himalayan pink salt
- 1/4 cup agave
- Melted dark chocolate (e.g., JoJo's Chocolate Bark)
- Shredded unsweetened coconut
- Crumbled Emmy's Organics pumpkin spice coconut cookies
Preparation
Blend all ingredients together in a food processor.
Roll the dough into balls.
Coat the balls in melted dark chocolate, shredded unsweetened coconut, and crumbled pumpkin spice coconut cookies.
Store the coated balls in the fridge.
