Gluten-Free Citric Tropical Poundcake

Ingredients

  • 1 cup rice flour
  • 1/2 cup grated coconut
  • 1/4 cup almond milk
  • 2 egg whites
  • 1 whole peeled and pitted orange
  • tsp vanilla extract
  • tsp baking soda
  • stevia to taste

Preparation

  1. Mix all the dry ingredients together and add the processed orange along with the other liquid ingredients.

  2. There is no need to beat the egg whites until they form stiff peaks.

  3. Bake for 20 minutes at 190°C.
