Peach and Raspberry Cookies
Ingredients
- 2 eggs
- 1/2 fresh peach, cut into small pieces
- A handful of raspberries
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 cup spelt flour or regular flour
- 1/2 cup oats
Preparation
Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.
In a bowl, whisk the eggs and mix with the butter and vanilla essence.
Add the rest of the ingredients apart from the fruit and mix with a spoon until well combined.
Fold in the fruit.
Shape into 6 cookies and place on the baking paper
Bake for 14 minutes.
