Peach and Raspberry Cookies

Ingredients

  • 2 eggs
  • 1/2 fresh peach, cut into small pieces
  • A handful of raspberries
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 cup spelt flour or regular flour
  • 1/2 cup oats

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.

  2. In a bowl, whisk the eggs and mix with the butter and vanilla essence.

  3. Add the rest of the ingredients apart from the fruit and mix with a spoon until well combined.

  4. Fold in the fruit.

  5. Shape into 6 cookies and place on the baking paper

  6. Bake for 14 minutes.
