Vegan French Toast Bites

Ingredients

  • 1 tbsp chia seeds
  • 1/3 cup silken tofu
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 3/4 cup unsweetened almond milk
  • 1 tbsp vegan butter
  • 1 sliced baguette, slices should be fairly thick

Preparation

  1. Heat a pan over medium-high heat

  2. Add all ingredients except the bread and butter to a blender

  3. Blend for about 1-2 minutes or until chia seeds are ground

  4. Pour the mixture into a dish and leave to sit for 5 minutes

  5. Add the vegan butter to the pan to grease

  6. Dip each slice of bread into the mixture for about 20 seconds on each side

  7. Fry for about 3 minutes on each side or until golden brown before flipping
