Super Delicious French Toast

Ingredients

  • 1/2 cup canned full fat coconut milk
  • 2 large eggs
  • tablespoons maple syrup
  • 1/4 tsp cinnamon
  • 1 teaspoon vanilla

Preparation

  1. In a medium mixing bowl, whisk together 1/2 cup canned full fat coconut milk or half and half, 2 large eggs, 2 tablespoons maple syrup (sub pretty much any sweetener of choice), 1/4 tsp cinnamon and 1 teaspoon vanilla

  2. Heat a large cast iron or other nonstick skillet to medium and add 1 tbsp butter or coconut oil

  3. When fat moves quickly around the pan, soak 2 or 3 slices (however many you can fit on the pan) in the milk mixture

  4. Shake off excess and add to skillet—you wanna hear a sizzle! Cook on both sides until golden brown, flipping after about 3-4 mins

  5. YOu’ll likely want to adjust the heat down as you go, and the second side takes less time

  6. I Smeared some peanut butter between my slices and topped everything with some more maple syrup
