Overnight Maple Pecan French Toast

Ingredients

  • 1 loaf of bread
  • 1/2 cup chopped pecans
  • 1/2 cup Good Culture Cottage Cheese
  • 6 eggs
  • 2 1/2 cups milk
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla

Preparation

  1. Cut the bread into cubes and combine in a bowl with the pecans.

  2. Grease a casserole dish and add the bread and pecans.

  3. In a food processor, blend the cottage cheese and milk together until it’s processed.

  4. Add the blended mixture to a bowl and mix in the maple syrup, cinnamon, and vanilla until well combined.

  5. Pour the mixture on top of the bread and pecans, making sure every piece is coated.

  6. Refrigerate the mixture overnight.

  7. Bake the dish the next morning at 350°F for 55-60 minutes.

  8. Remove from the oven and enjoy with maple syrup and powdered sugar on top.
