Cinnamon Sugar Pumpkin Bites
Ingredients
- 2 eggs, whisked
- 1 cup almond flour
- 1/4 cup organic pumpkin
- 3 tbsp maple syrup
- 1 tsp baking powder
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/3 cup coconut sugar
- 2 tsp cinnamon
- 2 tbsp coconut oil (for microwaving and dipping)
Preparation
Preheat the oven to 350°F.
For the mini muffins, in a bowl, mix together the whisked eggs, almond flour, organic pumpkin, maple syrup, baking powder, vanilla, cinnamon, and pumpkin pie spice until well combined.
Pour the mixture into a mini muffin pan.
Bake the mini muffins in the preheated oven for 14-16 minutes.
Allow the muffins to cool slightly before popping them out of the pan.
For the Cinnamon Sugar Mixture, combine coconut sugar and cinnamon in a bowl.
Microwave the coconut oil until melted.
Once the muffins have cooled a bit, dip each mini muffin first in the melted coconut oil and then in the cinnamon sugar mixture.
Repeat the dipping process for each mini muffin.
Optional: Consider using melted coconut butter for dipping, or enjoy the muffins on their own.
