Vegan Nutritious Oat and Almond Flour Cookies

Ingredients

  • 150g oats
  • 150g ground almonds
  • 1 tbsp chia seeds, ground
  • 150g coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 70g tahini
  • 60g coconut oil
  • 3 tbsp almond milk
  • 1 bar magicmayan chocolate, chopped

Preparation

  1. Whizz the oats to a fine flour in a food processor and grind the chia seeds in a spice grinder.

  2. Mix in the ground almonds, baking powder, sugar, and salt.

  3. Melt the coconut oil and add it along with the tahini, vanilla extract, almond milk, and chopped chocolate. Mix until well combined.

  4. Roll heaped tablespoons of the mixture into balls and place them on a lined baking tray. Flatten with your hand.

  5. Bake at 180C for about 10 minutes or until golden.

  6. Leave on the tray for a couple of minutes before transferring to a wire rack to cool.
