Brazilian Cassava Coconut Cake

Ingredients

  • 1 kg cassava
  • 3 tablespoons margarine
  • 250 ml milk
  • 100 grams shredded coconut (or coconut pieces)
  • 300 grams sugar
  • 4 eggs

Preparation

  1. Peel the cassava, cut into pieces, and blend with milk in a blender

  2. Add sugar, margarine, and eggs; blend again

  3. Add shredded coconut or coconut pieces and blend once more

  4. Transfer to a buttered baking dish

  5. Bake for about 20 to 30 minutes
