Brazilian Cassava Coconut Cake
Ingredients
- 1 kg cassava
- 3 tablespoons margarine
- 250 ml milk
- 100 grams shredded coconut (or coconut pieces)
- 300 grams sugar
- 4 eggs
Preparation
Peel the cassava, cut into pieces, and blend with milk in a blender
Add sugar, margarine, and eggs; blend again
Add shredded coconut or coconut pieces and blend once more
Transfer to a buttered baking dish
Bake for about 20 to 30 minutes
