Chocolate Cookies with Molten Chocolate Centers
Ingredients
- 120 g soft butter
- 60 g granulated sugar
- 100 g brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 120 g all-purpose flour
- 50 g cocoa powder
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 100 g white chocolate
Preparation
Beat the butter until creamy
Add the granulated sugar, brown sugar, vanilla extract, and salt, and continue beating
Add the egg and mix well
In a separate bowl, mix the flour, cocoa powder, cornstarch, and baking soda
Gradually add the dry ingredients to the butter mixture and mix until combined
Chill the dough in the freezer for 30 minutes
Preheat the oven to 180°C (350°F) for conventional or 160°C (320°F) for convection
Line baking sheets with parchment paper
Cut the white chocolate into rough pieces
Set aside one-third of the white chocolate pieces for garnish
Divide the dough into about 18 portions using an ice cream scoop and shape into balls
Press a piece of white chocolate into the center of each ball and seal the dough around it
Place the balls on the prepared baking sheet with space between them
Bake for about 8 minutes in the preheated oven
Let cool slightly
Optionally, melt the remaining white chocolate in a bowl over a hot water bath and drizzle over the cookies
