Lemon Cookies with Glaze
Ingredients
- 125g butter, room temperature
- Slightly less than 1 cup sugar
- 2 egg yolks
- 1 tablespoon cornstarch
- 1 packet baking powder
- 1 packet vanilla
- A pinch of baking soda
- A pinch of salt
- Grated lemon zest
- 2-3 tablespoons lemon juice
- 2-2.5 cups flour
Glaze
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1-2 tablespoons lemon juice
Preparation
Beat butter and sugar with a mixer for 1-2 minutes.
Add egg yolks and beat again.
Add the remaining ingredients and mix to form a soft dough.
Shape the dough into walnut-sized balls.
Bake in a preheated oven at 275 degrees for 13-15 minutes.
Remove from oven and press lightly with a glass.
Drizzle with the glaze and serve.
Glaze
Mix powdered sugar, milk, and lemon juice until smooth and runny.
